Inside the Ritual: Meet the Rwandan Producers Behind Our First Single-Origin
The story in every bag of Bay Ritual, grown high in the hills, washed with care, and roasted in Oakland.
Before any of this ends up in your grinder, it passes through a lot of hands. The most important ones belong to the smallholder farmers who grow this coffee in Rwanda. This is their story, and ours, and now partly yours.
Why Rwanda? A region with coffee in its soil
Rwanda does not look like most coffee country. There are no sprawling plantations here. The farms are small, often a fraction of a hectare, and they climb the hillsides between 1,600 and 1,800 meters above sea level. Two rainy seasons a year, cool nights, volcanic soil. Coffee likes it there.
That altitude does something to the beans. The cherries ripen slowly, which packs more sugar into each one. When we cup the lot we get caramel sweetness and a crisp red-apple finish. That is the signature of good Rwandan arabica, and the reason our first single-origin coffee is this one.
The farmers behind the bag
We buy from smallholder producers directly, with no big middleman in between. These are family farms where growing coffee has passed from parents to children for decades.
From cherry to cup: how this lot is made
The processing is simple to describe and hard to do well. Ripe cherries are picked and sorted, fermented, then washed clean of their fruit. What is left is a green bean that keeps the clean character of the farm. We chose a washed process because it lets the altitude show through. Clear caramel, clear apple, nothing muddying it.
Then it is our turn. We roast whole beans to a medium profile, light enough to keep those bright notes intact. There is no blend here and nowhere to hide. What you taste is the origin, in a 12 oz bag that stays fresh until you brew it.
